I used to make this all the time when I was living at home and my sisters loved it, my kiddos love it now!!!
You will need---
1 package (I use one when im making it just for my family, when I was living at home i used 2) Bear Creek Country Kitchens Potato Soup Mix (yup, Tina this is why I told you, you'd be surprized)!
4 or 5 medium potatoes (boil until soft-but not too soft because they will boil a little more once you put them in the soup)
as much frozen corn as you want (i use a lot because i like a lot of corn in my soup)
shredded cheese. i use the mexican mix that comes in the big bag from costco. you can use any kind of chedder cheese you want i just use that kind because its what i always have on hand.
again, use as much as you want, i like it cheesy but Brandon really doesn't so I don't put quit as much in the soup as i would like but then add a little on the top of my portion when i'm ready to eat.
salt and pepper to taste ( i like a lot of pepper)
That's it...
follow the directions on the package for making the soup and then add the potatoes, corn and cheese. I think the directions say to boil or simmer for 15 minutes. I do the 15 and then just keep it on warm until i'm ready to eat..
As long as the potatoes & corn are soft, and the cheese is melted...you're good to eat!!!!
*** you can sprinkle little bits of cheese or cooked bacon to the top
This is a good one and much easier than doing the entire thing from scratch....
